Greek Walnut Cake

In Greece, we call it ”KARIDOPITA”. Walnut is ”karidi” and pie is ”pita”. We used to add syrup into our cakes, so cake with syrup is pie for greeks. I know, we (greeks) are crazy!

I love this walnut cake, why? Because it’s moist and fluffy and i can serve it with ice-cream!

Karidopita with Ice-cream

Ingredients:

For cake:

  • 125 gr butter (melted)
  • 1 cup white sugar
  • 5 eggs
  • 1 cup milk
  • 2 cup walnuts (coarsely chopped)
  • 1 1/2 cup breadcrumbs
  • 1 1/2 cup all-purpose flour
  • 1 teaspoon cinnamon
  • 1 teaspoon cloves powder
  • 1 teaspoon baking soda
  • 3 teaspoons baking powder
  • 2 tablespoons brandy

For the syrup:

  • 3 cups white sugar
  • 2 cup water
  • 1 tablespoon lemon juice

Instructions:

  1. Preaheat oven to 200° C and prepare a baking pan with butter and flour.
  2. In a bowl, mix together: flour, breadcrumbs, baking powder and set aside.
  3. Mix sugar and butter with a mixer until light and fluffy scraping side of bowl.
  4. Then, add eggs one at time and continue to mix, until incorporated and add the milk.
  5. Stop the mixer and carefully, combine the walnuts with cinnamon and cloves.
  6. Add the brandy with baking soda – gently mix with a fork until frothy and then slowly add into the mixture.
  7. In the end, add the dry ingredients (flour, breadcrumbs and baking powder) and stir until incorporated.
  8. Bake to 200° C for 10 minutes and low the temperature to 180° C and continue bake for 20-30 minutes.
  9. While karidopita is baking, prepare the syrup. Add all the ingredients in a small sause pan and bring to a boil, remove from heat and let it cool completely.
  10. When karidopita is ready, remove from oven and gently ladle the syrup over the cake and let it sit and soak up all flavours.
  11. Don’t forget: hot cake and cool syrup or cool cake and hot syrup! Sprinkle some chopped walnuts over the cake, slice and serve with ice-cream!
