There is no food more SUMMERY and TASTEFUL than this : Briam with Gnocchi & Parmesan!
The Greek Briam recipe is basically roasted vegetables with tomato sauce and olive oil! We usually make it every summer, picking all the vegetables from our garden: zucchini, tomatoes, fresh herbs, carrots, eggplants, peppers. Our SECRETS are the extra virgin olive oil from our olive trees and the local feta cheese!
Today, we tried to make a new way of Βriam, a Greek – Italian way, with Gnocchi instead of potatoes and Parmesan instead of feta cheese!
- 250 gr. gnocchi
- 3 big tomatoes
- 3 red onions
- 3 carrots
- 3 cloves of garlic
- 5 mushrooms
- 1 big zucchini
- 1/4 yellow pepper
- 1/4 red pepper
- 1 green pepper
- 1 green onion
- 300 ml tomato sauce
- 500 ml water
- 1 tablespoon ground peppers
- 1 tablespoon paprika
- 1 teaspoon salt
- 50 gr. parmesan flakes
- 3 tablespoon olive oil
- fresh oregano leaves
- Preheat oven to 180oC.
- Wash and cut your vegetables into big squares. Place them in a oven pan with gnocchi, tomato sauce and all spices and bake for 30- 40 minutes to 180oC.
- In the last 10 minutes of baking, place the olive oil and parmesan flakes into the oven pan.
- Revome from the oven and add a sprinkle of fresh oregano leaves! READY!

- Parmesan belongs to yellow cheeses, which has a high calcium content.
- Yellow cheeses have a fairly reduced lactose content for people who suffer from lactose intolerance.
- People who avoid milk and lactose, cheese is an excellent alternative source.
