Briam with Gnocchi & Parmesan

There is no food more SUMMERY and TASTEFUL than this : Briam with Gnocchi & Parmesan!

Summer is Briam!

The Greek Briam recipe is basically roasted vegetables with tomato sauce and olive oil! We usually make it every summer, picking all the vegetables from our garden: zucchini, tomatoes, fresh herbs, carrots, eggplants, peppers. Our SECRETS are the extra virgin olive oil from our olive trees and the local feta cheese!

Today, we tried to make a new way of Βriam, a Greek – Italian way, with Gnocchi instead of potatoes and Parmesan instead of feta cheese!

Yum Yum Briam!

Ingredients:

  • 250 gr. gnocchi
  • 3 big tomatoes 
  • 3 red onions 
  • 3 carrots 
  • 3 cloves of garlic 
  • 5 mushrooms  
  • 1 big zucchini
  • 1/4 yellow pepper
  • 1/4 red pepper 
  • 1 green pepper
  • 1  green onion
  • 300 ml tomato sauce 
  • 500 ml water
  • 1 tablespoon ground peppers
  • 1 tablespoon paprika 
  • 1 teaspoon salt
  • 50 gr. parmesan flakes
  • 3 tablespoon olive oil
  • fresh oregano leaves 

Instructions:

  1. Preheat oven to 180oC.
  2. Wash and cut your vegetables into big squares. Place them in a oven pan with gnocchi, tomato sauce and all spices and bake for 30- 40 minutes to 180oC.
  3. In the last 10 minutes of baking, place the olive oil and parmesan flakes into the oven pan.
  4. Revome from the oven and add a sprinkle of fresh oregano leaves! READY!
